Do we need our own fleet to use it?

No. Third-party carriers, own vehicles or a mix are all handled. What changes is whether a trip carries a carrier rate or a vehicle running cost.

How does freight cost reach the order?

Cost is captured on the trip and allocated across the consignments it carried, so it lands on the right customer, order or trade consignment instead of in a general expense line.

Can one trip carry several dispatches?

Yes, and consolidation is the normal case. A trip holds many dispatches and each keeps its own delivery status within the trip.

What tracking does it give?

Trip and consignment status, milestones and ETA held on the record itself. Where a carrier provides its own tracking, that can be brought in through Integrations rather than checked on a separate site.
